So this week I've tried making sushi for my lunches and came across this 'perfect sushi rice' recipe. You can use it to make rolls like I have, or make a quick sushi bowl with toppings! (Makes 3 serves)
METHOD
1 - Cook 1 cup of medium grain rice with 1.2 cups of water (I used a rice cooker).
2 - While the rice is cooking, make the sushi seasoning by mixing together the following:
1/4 cup rice wine vinegar
1 tbsp sugar
1 tsp salt
3. Once rice is cooked, turn out the rice into a wide bowl and evenly pour over the sushi seasoning. Stir it with a wooden spoon or rice paddle in a 'cutting' motion so as not to break the rice grains. Leave the rice to cool near an open window or fan (not in the fridge).
4. Once the rice is room temperature, its ready to make sushi rolls!
